An introduction to laminated doughs, such as Danish, Croissant, Puff Pastry and other breakfast pastries. This course will focus on various lamination and folding techniques related to these doughs, and reviewing the final products made from them. A focus will be aimed towards the various mixing styles. The production of pastry fillings will also be made, including fruit, custard, and almond cream.

An introduction to cookies and brownies, including the various mixing methods, and a deeper look into the different classifications of cookies. Students will produce a variety of cookies and brownies using different mixing methods and make-up techniques. Focus will be aimed at the use of various types of ingredients, and their effect on the finished product. Discussion of the Baking Processes will provide a better visual on why these processes are important to baked goods. Madeleines will also be discussed in this course.
